Appearance - fine chocolate has a lovely sheen and an even colour.
Feel - the best chocolate does not contain any vegetable fat so it will start to soften in your fingers as soon as you touch it.
Aroma - the smell should be fresh and rich and not contain any chemical or sugary overtones.
Sound - good, pure chocolate will make a clear snap when a piece is broken off.
And finally, taste - the flavour will be full but quite dry, with a lovely long, chocolatey aftertaste. A little will go a long way, flavourwise!
